Bountiful Baskets


Last week I got a bountiful basket share (Bountiful Baskets) I got all of the above for $60.  Absolute bargain.  However, the trick now is to use it all before it goes bad.  So far so good.  Here are a few of the dishes we've had so far.  The fruit we will just eat raw for snacks and lunches.

Meal 6

Tonight I started dinner at 6pm.  That's really late for me.  HH to the rescue!  Red red stew with rice (I used brown instant rice to save time tonight) and roast/broiled zucchini and yellow squash sprinkled with Italian seasoning.

Meal 5

Tonight I made baked potato samosas from Happy Herbivore Light and Lean and vegetable korma from Happy Herbivore Abroad. For the korma I added in a heaped tablespoon of coconut cream and water to make it the right consistency.  The photo doesn't do it justice, it was delicious.

Meal 4 - Colcannon with roasted vegetables and crimini ale gravy

Tonight we had Happy Herbivore's Colcannon recipe alongside roasted carrots, turnips and zucchini and a crimini mushroom gravy made with red onion, ale, Dijon mustard, veg stock, garlic and thyme.

Friday and Saturday

I was in the mood for stew but didn't have any canned tomatoes (a lot of veggie stews have tomatoes).  Happy Herbivore to the rescue.  I made the Veggie pot pie gravy from Everyday Happy Herbivore and added cooked carrots, cauliflower, zucchini, squash, potato and chick peas.  I served it with Happy Herbivore whole wheat biscuits.  Delicious.



This is the uncooked photo of our pizza, cooked veggie pizza just doesn't look good in photos.  The dough I use is this one Pizza Dough I leave out the oil and only use 1 TBSP sugar.  One of my sons loves pineapple and spinach pizza hence why some of it is just those items.  The sauce is from the Sopranos cookbook for marinara, it's basically just slow cooked crushed tomatoes with garlic and basil. Some of the ingredients for the pizza I already had in the fridge so are not from this weeks grocery shop.

Dinner 1

Dinner on shopping night.

Baked potato, jalapeno/garlic and traditional hummus, garden salad with balsamic/raspberry dressing, tomato, cucumber, celery and whole wheat/flax crackers.

1st shopping list


Here is my first shopping trip.  I do have a pretty good stock of herbs. spices, dried beans and baking ingredients so I will be using pantry staples as well to make my meals.  This shopping trip included beer and wine as well as several items I don't normally buy (but did because I had kids with me) such as the Mamba candy.  I paid $65.70 after using a $5 off coupon. 


I bought the following:

1 box raisin bran
1 box crackers
4 lettuces
4lb pears
4lb oranges
1lb carrots
4 tubs of pineapple tidbits
1 can black beans
1 can northern beans
1 can green beans
1 can corn
1 12 grain loaf of bread
1 whole wheat loaf of bread
